love day

Since Valentine's Day fell on a Sunday this year, we decided that we would keep things pretty low key and celebrate Love Day with just the two of us...okay, four of us if you include Aspen and Baby. :) Considering I haven't made dinner (or spent more than 5 minutes in the kitchen) the past few months, I decided I would make a special dinner for the two of us to celebrate the occasion.


I decided to make Brisket...something I have never made before. I had heard rumors from a few Texans I know that it is 'SOOO GOOD' and since Scott served his mission there, I figured he may have a liking for it as well. I searched online and found a recipe that looked yummy (Brisket with Cranberry Gravy) and decided to pull my Crock Pot out from the back of my pantry and put it to good use. Also on the menu for the evening was asparagus, tossed salad, twice baked potatoes, sparkling cider and chocolate covered strawberries for dessert...yum!


Besides a slight run-in with the butcher at Smith's, everything turned out pretty darn good if I do say so myself. :) What can I say, I generally don't purchase meat that comes in 13 lb increments...


Honestly, I think our simple evening in turned out to be much more romantic than going to a fancy 5 star restaurant. What better way to celebrate Love Day than by limiting the guest list?

congrats Heidi on being pregnant! I am so so SO excited for you. Having a baby is the best thing in the world. I hope you start feeling better and better as your pregnancy goes along. Good luck with everything!
