I love you, Betty Crocker.

When I was in middle school I had the most fabulous track coach (Coach Downs) that had nicknames for almost everyone. From the time I met him in seventh grade he always called me 'Betty Crocker' (apparently I was going through a phase at the time where I always wore my hair up in a bun...) I have seen this particular coach several times since those days and each time he follows up with some comment about me being 'Betty Crocker'.


Well, Sunday I truly took on the role of Betty Crocker when I pulled out one of 'her' new gluten-free (GF) cake mixes for our Sunday treat. Seriously folks, God bless Betty Crocker for creating these gems. While I feel so blessed to have Scott, his family and other friends constantly sending GF recipes to help me learn the overwhelming task of cooking for someone with Celiac, it is so nice to be able to go to the regular grocery store and make a treat with items I already have. Although these are about quadruple the price of a normal cake mix, they are still about half of what it costs to buy one of the GF mixes from the health foods store.

{The real test was the taste test. While the texture was a little different (more like cornbread), the flavor was oh so good and Scott gave it two thumbs up!!}

Also, a big shout out to General Mills who just made 5 MORE of their cereals GF!

yea for GF!! now that i've seen a picture of a cake, i want cupcakes.

It's about time they caught on, isn't it? The Cinammon Rice Chex are very yummy :) Glad to hear the cake mix is good too.
